Liquor Brewing Biotechnology and Application Key Laboratory of Sichuan Province is based on the provincial key discipline - Fermentation engineering and the national characteristic specialty - Biological engineering of Sichuan University of Science & Engineering. The laboratory is jointly built by Sichuan University of Science & Engineering, Luzhou Lao Jiao Co.,Ltd. and Sichuan Food fermentation industry Research and Design Institute Co., LTD, it is a provincial key laboratory with the characteristics of traditional liquor research.
The Laboratory was established in December 2005 and has a construction area of 5,000 m2. It has advanced brewing, analysis and testing equipment and facilities, with a total value of more than 45 million yuan, including more than 70 international first-class equipment, worth more than 35 million yuan. The laboratory has a well-structured and vigorous scientific research team with 68 permanent staff, including 7 professors and 10 senior engineers, 9 associate professors and 9 senior engineers, there are 1 senior laboratory technician, 14 lecturers, 2 experimenters and 2 engineers, 35 doctors and 16 masters, 4 persons enjoying the special allowance of the State Council, and 5 academic and technical leaders in Sichuan Province, sichuan province academic technology leader candidate 5 people, Wine Master 8 people. The laboratory has a post-doctoral workstation to recruit master's students in food science and engineering, fermentation engineering and food engineering, and to train undergraduate students in brewing engineering and bioengineering, and for the wine industry to send a large number of outstanding personnel, known as “The cradle of Chinese liquor personnel training”.
The research focuses on the selection and application of functional bacteria in liquor brewing, liquor brewing technology and intelligentization, liquor flavor substances and their formation mechanism Since its establishment, the laboratory has undertaken more than 650 scientific research projects with a total expenditure of 260 million yuan, including more than 30 national-level projects, more than 38.9 million yuan was spent on projects at the provincial and ministerial levels, and more than 91.5 million yuan was spent on 210 projects at the provincial and ministerial levels; more than 140 projects at the provincial and departmental levels, and more than 5.4 million yuan was spent on them; and more than 270 horizontal projects, with 110 million Yuan spent on them. Under the leadership of the team of experts, more than 2,680 scientific papers have been published in the Journal of Applied Microbiology, Food Chemistry, Bioresource Technology, Frontiers in Microbiology and Food Science, among them, there are more than 1750 core journals, 210 SCI journals, 160 EI journals, 240 patents, 160 invention patents, more than 10 achievements, more than 50 provincial and ministerial awards, among them, "The key technology and application of traditional Luzhou-flavor liquor" and "The key technology research and industrial application of Luzhou-flavor liquor pit mud" won the first prize of Sichuan province for scientific and technological progress, "The promotion research and industrialization demonstration of traditional liquor industry based on the "Four modernizations integration" was awarded the second prize of Scientific and technological progress in Sichuan Province, "Study on key technology of Luzhou-flavor liquor production", "Analysis of microbial population structure in pit mud of Luzhou-flavor liquor" and "Innovation and application of production technology of Luzhou-flavor liquor" won the third prize of Sichuan province for scientific and technological progress.
